Classic gingerbread cookies are spicy, thin, crisp, and delicious. Decorate these with white icing for a traditional look.

Ingredients:
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/2 cup light molasses
- 1 egg yolk
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
Preparation:
Measure flour by lightly scooping into measuring cup and leveling off. In large bowl, combine butter and sugar and beat until fluffy. Add molasses and egg yolk and stir to combine. Add remaining ingredients and stir until a dough forms. Cover dough and chill for at least three hours.
When ready to bake, preheat oven to 350 degrees F. Roll out dough on lightly floured surface to a bit less than 1/4" thickness. Cut into shapes with cookie cutters or cardboard forms. Using a spatula, carefully place cookies in ungreased cookie sheets.
Bake at 350 degrees F for 8-10 minutes until set. Remove to wire rack to cool. Decorate with icing when completely cool. Makes about 30 cookies
