You could use chopped peanuts or pecans instead of cashew nuts if you'd like.

Ingredients:
- 18 oz. roll refrigerated chocolate chip cookie dough
- 1-1/4 cups chopped cashews
- 1 cup flaked coconut
- 2 tsp. vanilla
Preparation:
Preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper. In a large bowl, break up the cookie dough with your fingers. Add all remaining ingredients; mix well with spoon. Drop dough by spoonfuls onto prepared cookie sheets.
Bake at 350 degrees for 10 to 12 minutes or until golden brown. Cool 2 minutes, then remove from cookie sheets to wire racks to cool. 24 cookies
