Norwegian Heirloom Cookies

Ground almonds add great flavor and texture to these simple cookies. The mixing directions are a bit different from most cookie recipes. And they're rolled in powdered sugar after baking, which melts to form a sweet layer.

Prep Time: 25 minutes

Cook Time: 12 minutes

Ingredients:

  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1-1/4 cups ground almonds
  • 2 cups flour
  • 1 tablespoon water
  • 1 tablespoon vanilla
  • more powdered sugar

Preparation:

In large bowl, combine shortening, butter, and 1 cup powdered sugar and mix well until combined. Add ground almonds and mix well. Gradually stir in flour until blended. Then sprinkle water and vanilla over dough and work in with a fork.

Preheat oven to 325 degrees F. Form the dough into crescent shapes, using about 1 tablespoon of dough for each. Place on greased cookie sheets and flatten slightly with palm. Bake at 325 degrees F for 12-15 minutes until very light golden brown around edges. Immediately remove from cookie sheets and drop into a bowl full of powdered sugar. Let cool on wire racks, then reroll in more powdered sugar.
