White Chocolate Pear Cookies

By Linda Larsen, About.com

These tender little cookies are drizzled with a bit of melted white chocolate in this easy recipe; they're perfect for Christmas or anytime. If you can't find the white chips, you can chop a white chocolate bar and use that.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 1-1/2 cups peeled, finely chopped fresh pears
  • 1/2 cup butter
  • 1/4 cup vegetable shortening
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1-1/2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 cups granola
  • 1 cup vanilla milk chips OR white chocolate chips

Preparation:

Preheat oven to 375 degrees F. In large bowl, cream butter, shortening, and sugar until light. Blend in egg and vanilla. Stir in pears. Combine flour, soda, salt, and cinnamon and add to butter mixture; beat until smooth. Add granola and 1/2 cup white chocolate chips; stir well.

Drop by spoonfuls onto ungreased cookie sheets. Bake at 375 degrees F for 10-12 minutes or until golden brown. Let cool on cookie sheets for 2-3 minutes, then remove to wire racks to cool completely. Melt remaining vanilla milk chips in microwave or over very low heat. Drizzle over cooled cookies. Makes about 36 cookies
