Slow Cooker Pear Caramel Cake

This looks like a long list of ingredients, but it goes together very quickly. And for a superb dessert recipe that you can forget about until it's time to eat, this can't be beat.

Prep Time: 20 minutes

Cook Time: 2 hours

Cooling time: 30 minutes

Total Time: 2 hours, 50 minutes

Yield: 6 servings

Ingredients:

  • 1 cup brown sugar
  • 1/2 cup water
  • 1/2 cup pear nectar
  • 2 tablespoons butter
  • 1/2 teaspoon cinnamon
  • 1 cup flour
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup whole milk
  • 1/4 cup pear nectar
  • 1/2 teaspoon vanilla
  • 1 egg, beaten
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped pecans
  • 1/2 cup chopped drained canned pears

Preparation:

Spray a 3-1/2 quart crockpot with nonstick baking spray containing flour.

In large bowl mix flour, granulated sugar, baking powder, and cinnamon. Add milk, 1/4 cup pear nectar, vanilla, egg, and oil and mix just until combined. Stir in pecans and pears and spoon and spread into prepared crockpot.

In small saucepan, mix 1 cup brown sugar, water, 1/2 cup pear nectar, butter, and 1/2 teaspoon cinnamon. Bring to a boil and cook for 2 minutes, stirring frequently, until a smooth sauce forms.

Pour sauce mixture slowly over the cake mixture in crockpot. Cover and cook on high for 2 to 2-1/2 hours until a toothpick inserted 1" into the center of the cake comes out clean. Remove cover from crockpot, turn it off, and let stand, uncovered, for 30 to 40 minutes to cool a bit before serving. There will be a cake that has formed over caramel sauce; turn the servings over as you scoop them out of the slow cooker.
