Summer Pudding

Summer Pudding

Linda Larsen
Even when it's steaming outside, you still want dessert. Something cool and creamy will help you feel cooler. And these recipes are so easy to make! They require no heat at all. Enjoy a creamy almost instant cheesecake, or wait a bit longer for some delicious concoction to freeze.

Every so often I like to take some time and browse through the frozen aisle of the supermarket. You'll find many new varieties and flavors of ice cream and frozen desserts to inspire you. In fact, the easiest no cook dessert is just some fabulous ice cream layered with indulgent toppings in a purchased cookie crust!

Rocky road is a combination of chocolate, marshmallows, and nuts. Piled high in a pie, this ice cream treat is superb.
  • Lemonade Pie
This pie tastes like a cool glass of lemonade frozen in a pie crust. What more do I need to say?

Use your favorite flavors of sherbet in this sweet and beautiful pie.
  • Peach Sorbet with Marinated Strawberries
What could be better than peach sorbet and strawberries? Add some champagne!

A crust made of chocolate chip cookie crumbs is topped with a sweetened mascarpone and chocolate frosting filling. This super easy dessert is perfect for any meal.
