Pear Apricot Cobbler

This delicious and homey fruit cobbler is also delicious; the colors of the three fruits are really beautiful, baked until a crunchy butter batter.

Prep Time: 25 minutes

Cook Time: 35 minutes

Total Time: 1 hour

Ingredients:

  • 4 cups peeled and sliced pears
  • 1 cup cranberries
  • 16 oz. can apricot halves, undrained
  • 1/2 cup sugar
  • 1/2 tsp. cinnamon
  • 1-1/4 cups flour
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 cup milk
  • 1 Tbsp. butter, melted
  • 2 eggs, beaten

Preparation:

Preheat oven to 350 degrees. Grease a two quart casserole and set aside. Combine pears, cranberries, undrained apricots with sugar and cinnamon in a heavy saucepan. Cook over medium heat for 15 minutes until mixture is bubbling, stirring frequently.

Meanwhile, in medium bowl combine flour, sugar, baking powder and salt and mix. In small bowl combine milk, melted butter and beaten eggs and beat. Stir into flour mixture until batter is smooth.

Pour the hot fruit mixture into the prepared casserole dish. Pour batter over fruit mixture. Bake at 350 degrees for 20-25 minutes, until topping is golden brown and fruit is bubbling. 8 servings

I used 2 cups of pears and diced them in 1 "" chunks; I added 1 3/4 cups of diced Granny Smith apples and 1/4 cup of Lady apples (as this is what I had on hand). I used 2 cups of diced fresh apricots and 1 cup of diced fresh bing cherries. I used the juice of one lemon instead of the canned apricot juice and reduced the sugar to about 1/3 cup. I added a teaspoon of chopped fresh ginger to the fruit. For the crust, I replaced 1/4 cup of the flour with wheat flour; reduced the sugar to 1/3 cup and spinkled 1/8 cup of turbinado sugar on top of the crust before baking. The result was a little tart but very good as it was all fresh fruit. I was trying to use the fruit I had at home and make the recipe a little less sweet. I brought it to a Church potluck and got great comments.
