There are a few tricks to working with ice cream. It usually must be softened a bit before spreading in a pie shell or layering between cookies. You can soften ice cream in the microwave oven at 30% power for 20-30 seconds. Make sure to check the ice cream at the 20 second point, then let stand for 1-2 minutes. Ice cream can be softened by letting it stand at room temperature for 15-20 minutes. And you can use your stand mixer to soften ice cream too; beat the ice cream on medium for 30-40 seconds until the consistency softens.
When your confection is completed, freeze it for at least 3-4 hours before serving, or follow instructions in the recipe. Remove the dessert from the freezer 20-30 minutes before serving so it softens slightly and the flavors can bloom.
If you're making your own ice cream, you can freeze it in a traditional crank ice cream freezer, using proportions of 2 cups of crushed ice covered with 1/2 cup of rock salt. The ice cream will be much smoother and simply better if you let the custard sit in the refrigerator overnight before freezing.
