Classic pound cakes are made with a pound each of sugar, butter, eggs, and flour. I'm not sure if this is 'classic', but is certainly is wonderful!

Prep Time: 30 minutes

Cook Time: 1 hours, 00 minutes

Ingredients:

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 3 cups sifted flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 cup buttermilk
  • 1 tablespon lemon juice

Preparation:

Preheat oven to 325 degrees F. Grease and flour 12 cup bundt pan and set aside. In large mixing bowl, beat butter with sugar until light and fluffy. Add eggs one at a time, beating thoroughly after each addition.

Sift together flour, baking powder, soda, and salt. Add to butter mixture alternately with buttermilk and lemon juice, beginning and ending with flour.

Spoon batter into prepared pan and bake at 325 degrees F for 55-65 minutes until cake is lightly browned, set, and a toothpick inserted in center comes out clearn. Cool 5 minutes in pan, then invert onto serving plate and cool completely.
