Dinner for the Week

We're halfway through the week! Time to take a look at your fridge and pantry and make sure that the food is being stored properly, i.e. is well covered refrigerated or frozen. If necessary, you can make another trip to the grocery store to replenish supplies.

Thursday Dinner

  • Crockpot Vegetarian Chili
    It's time for a crockpot recipe! I always try to make at least one crockpot recipe during the week; it's a day I look forward to because I know dinner will be ready when I am. And I always try to make at least one vegetarian meal a week. Reserve some of the chili for the Taco Salad on Saturday night.
  • Carrot Pineapple Salad
    This delicious salad is a cool accompaniment to the hot and spicy chili. Make it Wednesday night or in the morning Thursday before you head off to work.
  • Cheese Crackers
    Crisp little crackers are really fun to make; get your kids involved. Making these crackers is a great way to burn off some steam!
  • Fastest Cheesecake
    This recipe is so adaptable; you can vary the flavor of sweetened condensed milk, use low fat versions, and top it with different pie fillings and toppings. Enjoy!

Friday Dinner

  • Grilled Steak with Pistachio Butter
    It's time for a treat! This flavored butter is really excellent on just about any grilled steak or meat like grilled chicken or salmon filets.
  • Hobo Potatoes
    Potatoes and carrots cook in a foil packet in this easy and delicious side dish recipe. I would leave out the bacon in this recipe and add another tablespoon of butter to the dish.
  • Melon Salad
    This is one of my favorite salad recipes. Melons are available any time of the year, and when the juicy flesh is marinated in citrus juices and mint leaves, the result is incredible.
  • Strawberries Dipped in Chocolate
    This is just about the simplest dessert ever, and it is so good. Save some of the strawberries for tomorrow night's dessert.

Saturday Dinner

  • Taco Salad
    Use leftover Vegetarian Chili from Thursday to make these easy main dish salads. Put out a ton of different toppings and let each family member create their own masterpiece.
  • Southwestern Flatbread
    I love this simple recipe that's packed full of flavor. The bread is tender and chewy at the same time, and the little breads look so pretty.
  • Super Fast Eclairs
    Use the strawberries from last night to make this excellent three ingredient recipe. If you can't find ladyfingers or madelines, use graham crackers or simple sugar cookies.

And that's it! Enjoy your week's worth of dinners, and be sure to record any changes you made in the recipes so you can reproduce your success.
