There are some wonderful topping choices for these buffet recipes. I personally love 'faux' chicken nuggets. Now, don't make a face - they are really wonderful! They taste just like chicken, are better for you since they contain soy, and vegetarians can eat them too. Then, of course, there are the classic tostada toppings, like ground or shredded beef, shredded chicken, meatballs, guacamole, chopped tomatoes, or shredded lettuce and cheese. Or the real chicken nuggets, if you must!
This buffet should be set out in a certain order too. Place the crisp fried tortillas or tortilla shells first, followed by the refried beans, kept hot in a crockpot. Then place the hot toppings (like those chicken nuggets, or a thick chili), followed by salsas, cheese, lettuce, guacamole, peppers, other vegetables, and anything else your heart desires. Lots of napkins and some sturdy plates are a necessity.
Offer lots of beer, pop and sparkling water, some great candies, an ice cream pie, or cookies for dessert, and you have a fabulous party that's super easy on the host or hostess.
