The inexpensive meal series continues with this meal that uses no heat at all. It's really too hot to cook now, so I turn to canned and frozen ingredients that just need to be mixed and refrigerated. This simple recipe can be dressed up by adding canned chicken or tuna, drained black beans, minced garlic, or other fresh herbs.

  • Butter Bean Salad
    Butter beans are also known as Lima beans. They are tender, nutty, and pillowy tasting, and as Laurie Colwin says, "people should stop saying mean things about them." I love this quick and refreshing salad. Cost for four servings: $5.38
