Celebrate Spring!

Marshmallow Puffs

Marshmallow Puffs

Linda Larsen
Easter is a celebration of spring and rebirth. We celebrate with family and friends by going to church, staging Easter Egg hunts, and of course eating delicious foods.

Ham and lamb are traditional foods served for Easter dinner. And accompaniments should celebrate the new flavors of spring: asparagus, lemon, and fruits like raspberries and strawberries. Plan your menu so hot and cold temperatures, sweet and savory flavors, and crisp and smooth textures are balanced. Set your table with your prettiest china, make sure you have tiny spring bouquets at each place setting, and enjoy your time together.

Crockpot Ham Easter Dinner

All of the recipes in this easy yet sumptuous dinner can be made ahead of time, so there's no last minute flurry of activity. Just take the ham out of the crockpot, place the rest of the dishes on the table, and eat!

Mango chutney creates a rich glaze with a fabulous depth of flavor. The ham will melt in your mouth.
  • Crockpot Glazed Carrots
Oh yum. Tender baby carrots are glazed in a butter honey mixture.
  • Lemony Pasta Spring Vegetable Salad
This fresh salad, with its creamy lemon dressing, is a perfect side dish for the ham.
  • Strawberry Spinach Salad

These little batter rolls are tender and filled with flavorful dill seed. Reheat them by wrapping a batch in foil and heating at 350 degrees F for about 10 minutes.
  • Lemon Chiffon Cake
This gorgeous cake is a perfect end to this easy meal. Serve it with some raspberries and strawberries that you mixed with a bit of sugar.

Roasted Leg of Lamb Easter Dinner

A leg of lamb is boned then butterflied by your butcher, so it cooks perfectly in very little time. The rich meat is traditionally served with a mint sauce or mint jelly to help cut its unctuous nature. And simple side dishes keep the lamb the star of the menu.

  • Roasted Butterflied Leg of Lamb
When leg is lamb is properly roasted, it's delicious, juicy, and tender. Serve it with some purchased mint jelly to help cut the rich flavor.
  • Party Potatoes
Make this casserole ahead of time and reheat it just before serving. The creamy potatoes are delicious.
  • Lemon Mint Couscous
Couscous is one of the easiest grains to cook. And when it's flavored with lemon and mint, it makes a delicious side dish for your lamb.
  • Strawberry Asparagus Salad
This gorgeous salad, with sweet strawberries and tender asparagus, is the perfect spring side dish.
  • Honey Rolls
Another yeast batter bread recipe! I love these fabulous soft and sweet dinner rolls; and they're so easy to make.
  • Fluffy Raspberry Dessert
This creamy and smooth frozen dessert is wonderful topped with some whipped cream and mint sprigs.

Grilled Ham Easter Menu

Yes, you can cook a whole ham on the grill! Just be sure to use the indirect cooking method and time the cooking carefully. This is a great meal to serve when it's beautiful outside; eat out on the porch! If you are serving just a few people, try Peach Glazed Ham Steak.

  • Grilled Orange Ginger Ham
When ham is cooked on the grill it takes on a fabulous smoky flavor, enhanced by the flavorful glaze.
  • Party Potatoes
Creamy make-ahead potatoes are perfect with the sweet glazed ham.

  • Apple Glazed Sausage and Bacon
Apple jelly and maple syrup form a sweet glaze on savory and spicy sausages and bacon. Yum.
