Passover is the celebration of the Israelite's freedom from bondage. through plagues upon their Egyptian captors. The last plague was the killing of all firstborn children. Jewish children were spared (God "passed over" their homes) so that is why the holiday is named 'Passover'.

There are special dishes and menus to celebrate the holiday, and a special cleaning where all grain-based dishes and leavening (called 'chamtetz') must be removed from the home. Instead of compiling menus, I've collected some recipes with a bit of a twist which adhere to food guidelines and that are still quick, easy, and delicious. Enjoy.

  • Apple Raspberry Matzo Brei
    Apples are cooked in brown sugar with pecans, then stirred into sweet matzo brei and topped with fresh raspberries. Yum.
  • Roast Lemon Chicken
    Roasted chicken is traditional for Passover; it's juicy, tender, and very flavorful. And very easy!
  • Roasted Cauliflower
    Cauliflower is one of my favorite vegetables. When it's roasted, it becomes tender and slightly sweet. Try this easy recipe as a great Passover side dish.
  • Meringue Mushrooms
    These little cookies look just like mushrooms. They're fun to make and fun to eat.

  • Chocolate Meringue Cookies
    Meringue cookies are a fabulous way to make dessert while avoiding grains. Two kinds of chocolate make these little cookies rich and delicious.
  • Pecan Crusted Chocolate Mousse Pie
    This easy pie crust is a good one to choose even when it's not Passover; it's so simple. And the chocolate mousse that fills the pie is great on its own, piped into dessert dishes.
  • Matzo Coated Chicken Breasts
    Matzo meal and ground almonds coat tender and juicy chicken breasts in this super easy entree recipe.
  • Crockpot Salmon with Onions and Garlic
    Salmon filets are a wonderful entree for any entertaining occasion. When made in the slow cooker, they are super easy.
  • Matzo Egg Cups
    Matzo meal works very well in a simple crepe batter. The crepes are then pressed into custard cups, filled with eggs and cheese, and baked until the eggs are set. Yum.
