Easter doesn't get the same amount of attention in the kitchen that Thanksgiving does, even though I think the menu can be more difficult. Reheating a ham is tricky, and scalloped potatoes can take a lot of time to make. Then there's the pies for dinner; those can stymie the most accomplished cook. So here's my menu for the easiest Easter ever.

Easiest Easter Dinner Ever

Serve a cold ham. That's right - cold! The cured and smoked hams you buy in the supermarket are fully cooked (read the label to make sure), and don't need to be reheated. After all, that slice of ham is usually cool by the time you dig in, so make it easier on yourself and serve the ham cold.

Easiest Ever Scalloped Potatoes
You may shy away from serving potatoes from a box in a holiday menu, but my trick makes these taste just like homemade.

Roasted Asparagus
When the potatoes are about halfway done, add a pan of asparagus to the oven and you have a delicious side dish with hardly any work.

Stuffed Peaches
This simple salad that looks so fancy has to be made ahead of time, so all you have to do is pull them from the fridge and place them on the table.

Honey Rolls
This recipe for batter rolls is so delicious and so easy too. Make them ahead of time, then wrap in foil and reheat in the oven when the asparagus comes out.

My Sister's Lemon Meringue Pie
This fabulous pie is my favorite version of Lemon Meringue. The graham cracker crust makes it easy, and the filling is as smooth as velvet.
