When developing this menu for Easter Brunch, I tried to think of the best brunches I have had at elegant hotels. Something hot and something cold, a nice variation of colors, flavors, and textures, and elegant and delicious food was what they all had in common. These are some of my favorite recipes for breakfast and brunch. Make sure that you set your table with your prettiest china and goblets, and have the kids make a centerpiece using an Easter basket and the eggs they have colored. Fresh flowers and candles are in order too. Then relax and enjoy the day with family and friends.
1. Heavenly Cheese Molded Salad
This beautiful and rich salad is the perfect choice for this meal. The cheese might seem like a strange addition, but it's really good. It tempers the sweetness of the salad and blends beautifully with the pineapple.
2. Easiest Cheese Quiche
This beautiful and fluffy quiche is so easy to make. If you're having more than six people to brunch, make two or three quiches. It doesn't take very long and the results are delicious.
3. Chicken Melon Salad
This beautiful salad couldn't be easier to make. Use another flavor of yogurt if you'd like. If you can find a melon flavor, all the better! Peach yogurt would be really good too.
4. Grape Salad
Grapes are always in season and it's easy to find them in the grocery store. They are treated to a honey and curry dressing that brings out their flavor and adds just a touch of spice.
5. Strawberry Spinach Salad
A honey and cinnamon salad dressing adds spark to this traditional salad. Baby spinach leaves are the best choice to pair with the sweet and slightly tart strawberries.
6. Roasted Asparagus
Asparagus is the vegetable I associate with spring. The tender spears are delicious when roasted for a short time with olive oil and salt. That's all they need!
7. Chocolate Chip Coffee Cake
This velvety coffeecake with the tender, melting texture adds a bit of chocolate to this menu. Which is really what every menu needs.
8. Lemon Truffled Pie
This delicious pie, with its ultra creamy cheesecake topped with homemade lemon filling, is perfect for brunch, especially an Easter brunch. Make two, because everyone is going to want seconds.
