Cottage cheese adds a nice richness to this super simple egg recipe.

Ingredients:
- 1 Tbsp. butter
- 1/3 cup chopped red bell pepper
- 2 Tbsp. chopped green onions
- 1/2 cup cottage cheese
- dash hot pepper sauce
- salt and pepper to taste
- 4 eggs
Preparation:
In a medium skillet, melt butter over medium heat. Add red pepper and green onions and cook and stir until tender, about 3-4 minutes. Combine remaining ingredients in a small bowl and beat well until combined. Add to mixture in skillet. Cook over medium heat until eggs are thoroughly cooked, stirring only occasionally. Serves 2You may double this recipe to serve four people.
