Cottage cheese adds a nice richness to this super simple egg recipe.

Cook Time: 12 minutes
Ingredients:
- 1 Tbsp. butter
- 1/3 cup chopped red bell pepper
- 2 Tbsp. chopped green onions
- 1/2 cup cottage cheese
- dash hot pepper sauce
- salt and pepper to taste
- 4 eggs
Preparation:
In a medium skillet, melt butter over medium heat. Add red pepper and green onions and cook and stir until tender, about 3-4 minutes. Combine remaining ingredients in a small bowl and beat well until combined. Add to mixture in skillet. Cook over medium heat until eggs are thoroughly cooked, stirring only occasionally. Serves 2
