Egg and Cheese Tostadas

Egg and Cheese Tostadas are a great idea to make when the cupboard is almost bare, or for a brunch or late night dinner. You can make these as mild or as spicy as you'd like.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 12 eggs
  • 1/2 cup sour cream
  • 1/4 cup light cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 2 cups shredded Colby cheese
  • 2 cups chunky salsa
  • 2 avocados, diced
  • 2 red bell peppers, diced
  • 6 Fried Tostada Shells

Preparation:

In large bowl, beat eggs with sour cream, light cream, salt, and pepper. Melt butter in large saucepan over medium low heat. Add eggs and scramble until set.

Prepare the Fried Tostada Shells while the eggs are cooking and drain on paper towel.

When eggs are done, stir in the cheese and let melt. Make tostadas with eggs, Tostada Shells, and remaining ingredients. Serve immediately. Serves 6
