Huevos Rancheros

I love this spicy, creamy, and crunchy recipe. The addition of refried beans to scrambled eggs, cheese, and crisp fried tortillas is superb. Make it for breakfast this weekend!

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 1/4 cup vegetable oil
  • 4 (8 inch) flour tortillas
  • 1 (16 oz.) can refried beans with seasonings
  • 6 eggs
  • 1/4 cup cream
  • 2 Tbsp. butter
  • Salt and pepper to taste
  • 1-1/2 cups shredded Pepper Jack or Cheddar cheese
  • 1 cup salsa
  • Sliced avocados
  • Chopped tomatoes
  • Sour cream

Preparation:

Heat vegetable oil in a deep skillet over medium high heat. Fry tortillas, one at a time, until crisp, turning once while cooking. Remove and place on paper towels to drain. Repeat with remaining tortillas.

In another small saucepan, place the refried beans. Heat over low heat, stirring frequently, until hot. In medium bowl, beat eggs with cream; season to taste with salt and pepper.

When tortillas are all fried, drain remaining oil from saucepan and add butter. Heat pan over medium heat until butter sizzles. Pour egg mixture into butter and cook eggs, stirring occasionally, until set but still moist.

Assemble by dividing tortillas among plates. Top with refried beans, then scrambled eggs. Sprinkle with cheese and top with salsa. Serve with avocados, chopped tomatoes, and sour cream. Serves 4
