Everyone should know how to cook risotto. The name itself scares many people. But risotto is not difficult to make. All it takes is a heavy skillet, a burner, a spoon, and some rice and broth. Start to finish, a perfect risotto takes only about half an hour to make.
Here's where I insert a confession. I have always made risotto with long grain white rice. Now, I know that to purists and Italian connoisseurs, this is heresy. When I first started making risotto 25 years ago, I could not find arborio rice. This was well before the internet and on-line food ordering. I did wonder what I was missing by not using arborio rice. So last weekend I bought some arborio rice and made risotto. I like long-grain rice better.
Yes, the risotto with arborio rice was creamier. But it also had a starchier taste that I just did not like. And arborio rice is so much more expensive than regular long grain white rice! The choice is yours. But I'm going to continue using long grain white rice, content that I experimented and reached my own conclusion!

The stirring action helps the rice release starch as it cooks, which makes the risotto creamy. And rice has a tendency to sink to the bottom of the mixture and stick to the bottom of the pan. So keep it moving.
