I adapted this recipe, which started as a skillet meal, for the crockpot. It's really delicious and easy to make too. Serve it with hot cooked rice or couscous, or even some penne or orzo pasta.

I love this recipe; it's creamy, smooth, and so flavorful. And the chicken is moist and tender. I usually add chopped onion and baby carrots when I make it; you could use bell peppers, mushrooms, and garlic too.

Wild rice is the only 'rice' I've found that cooks well in the crockpot. Brown rice is okay, but wild rice holds up best during the long cooking time. This homey and comforting recipe is easy and delicious.
