These recipes for chicken entrees and casseroles cooked in the crockpot are the best. Remember to follow cooking times and instructions carefully, and that you can substitute many ingredients for those called for in the recipes.
1. Crockpot Chicken Supreme
This fabulous and super easy recipe has the best taste and texture. It was one of the first recipes I posted at Busy Cooks, and remains one of the most popular.
2. Crockpot Orange Curried Chicken
I adapted this recipe, which started as a skillet meal, for the crockpot. It's really delicious and easy to make too. Serve it with hot cooked rice or couscous, or even some penne or orzo pasta.
3. Creamy Slow Cooker Italian Chicken
I love this recipe; it's creamy, smooth, and so flavorful. And the chicken is moist and tender. I usually add chopped onion and baby carrots when I make it; you could use bell peppers, mushrooms, and garlic too.
4. Crockpot Chicken Wild Rice Casserole
Wild rice is the only 'rice' I've found that cooks well in the crockpot. Brown rice is okay, but wild rice holds up best during the long cooking time. This homey and comforting recipe is easy and delicious.
5. Crockpot Jambalaya
After a critique by a reader, I revised this recipe to more closely resemble the real thing. If you like spicy foods, you can increase the cayenne pepper and Tabasco amounts even more. If, like me, you're a wimp, reduce them or eliminate them. The andouille sausage will add lots of spice!
6. Crockpot Lemon Chicken with Carrots
Lemonade is the secret ingredient in this sweet and tart recipe. It uses chicken thighs so it can cook for a longer period of time without drying out. It's perfect served over rice pilaf with a simple fruit salad on the side, or with some of late winter's first asparagus.
7. Crockpot Chicken Shrimp Alfredo
When companies started making bottled Alfredo sauces, my life became so much easier! The product is wonderfully creamy and smooth and works very well in the crockpot. This colorful recipe is a meal in one.
