Curried Veggie Fish Skillet

This healthy and hearty recipe will satisfy even die-hard meat eaters in your family. Try swordfish steaks for an even meatier taste; cook those 10 minutes per inch of thickness.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2-4 tsp. curry powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 carrots, sliced
  • 2 yellow or orange bell peppers, sliced
  • 1 lb. halibut or cod fillets, cut into serving pieces
  • 1 Tbsp. lemon juice
  • 1 pint cherry tomatoes

Preparation:

In large skillet, heat olive oil. Add onion, garlic, and curry powder; cook and stir for 4 minutes. Then add salt, pepper, and carrots. Cover skillet and cook mixture for 8-10 minutes, stirring frequently, until crisp tender.

Add bell peppers to skillet; cook and stir for 3 minutes. Add fish to skillet and sprinkle with lemon juice. Cover and cook 5 minutes longer. Then add tomatoes to skillet and cover again. Cook until fish flakes when tested with a fork, 2-3 minutes longer. Serves 4
