Ingredients:
- 2 Tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2-4 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 carrots, sliced
- 2 yellow or orange bell peppers, sliced
- 1 lb. halibut or cod fillets, cut into serving pieces
- 1 Tbsp. lemon juice
- 1 pint cherry tomatoes
Preparation:
In large skillet, heat olive oil. Add onion, garlic, and curry powder; cook and stir for 4 minutes. Then add salt, pepper, and carrots. Cover skillet and cook mixture for 8-10 minutes, stirring frequently, until crisp tender.
Add bell peppers to skillet; cook and stir for 3 minutes. Add fish to skillet and sprinkle with lemon juice. Cover and cook 5 minutes longer. Then add tomatoes to skillet and cover again. Cook until fish flakes when tested with a fork, 2-3 minutes longer. Serves 4
