Fish and Slaw Tostadas is an excellent quick and easy main dish recipe you can make in minutes. Dilled Coleslaw can be made ahead of time to make this recipe even easier.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 1 (16-ounce) package frozen fish sticks
  • 1/3 cup vegetable oil
  • 4 (8-inch) flour tortillas
  • 2 cups shredded provolone cheese
  • 3 cups Dilled Coleslaw OR Freezer Coleslaw or your favorite coleslaw

Preparation:

Bake fish sticks according to package directions. While the fish is baking, heat oil in large skillet over medium-high heat. When the oil is shimmering, carefully, using tongs, place a tortilla in the skillet. Cook for 10-20 seconds on one side, until brown, then turn carefully and cook for 5-10 seconds on the other side until brown and crisp. Remove to paper towels to drain.

Repeat with remaining tortillas. Have Dilled Coleslaw or Freezer Coleslaw and cheese ready.

When fish sticks are done, sprinkle cheese on the fried tortillas, top with the hot fish sticks and cold coleslaw and serve immediately. Serves 4

This recipe reminds me of fish tacos I had in California. It's really easy to make. I love the cold slaw and hot fish and melted cheese. Yummy!
