Fish Tostadas

Use your favorite fish for grilling in this easy and elegant recipe for Fish Tostadas. Use Apricot Salsa or any fresh salsa recipe.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 6 (8-inch) flour tortillas
  • 1-1/2 pounds grouper or orange roughy fillets
  • 1/2 teaspoon salt
  • 2 tablespoon olive oil
  • 1 tablespoon chili powder
  • 3 cups Apricot Salsa
  • 2 cups shredded lettuce
  • 2 avocados, diced

Preparation:

Prepare and preheat grill. First grill the tortillas, turning once, until crisp, about 3-5 minutes; set aside. Brush fillets with oil and sprinkle with salt and chili powder. Grill on foil or in a grill basket until the fish flakes when tested with fork.

Have the Apricot Salsa waiting along with remaining ingredients. Top the toasted tortillas with lettuce, then fish, salsa, and avocados and serve immediately. Serves 6
