Fish Fillets Veracruz

This simple five ingredient recipe adds great flavor and color to plain white fish fillets.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 14 ounce can diced tomatoes, undrained
  • 1/4 cup sliced green olives
  • 4 (6 ounce) mild fish fillets
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 2 tablespoons grated Parmesan cheese
  • 3 tablespoons olive oil

Preparation:

In medium skillet, heat 1 tablespoon olive oil; cook onion until tender, about 5 minutes. Add undrained tomatoes and bring to a boil; reduce heat and simmer for 5 minutes until blended. Add olives, cover, and remove from heat.

On shallow plate, combine flour, salt, pepper, and cheese. Dip fillets into this mixture. In large skillet, heat 3 tablespoons olive oil over medium high heat; add fish and cook for 2-3 minutes on each side until light golden brown. Place cooked fish on serving plate and spoon olive sauce over. Serves 4
