Halibut with Nicoise Salad is an easy main dish that tops grilled fish with a savory tomato and olive salad.

Ingredients:
- 1 cup cherry tomatoes
- 1/2 cup chopped cooked green beans
- 1/4 cup sliced ripe olives
- 1/4 cup sliced green olives
- 1 cup mixed salad greens
- 1/4 cup red wine vinaigrette
- 4 halibut fillets or steaks
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Preparation:
In medium bowl, combine tomatoes, green beans, olives, and salad greens and toss to combine. Drizzle with vinaigrette and set aside.Brush halibut with olive oil and sprinkle with salt and pepper. Saute fish in a saucepan over medium heat until cooked through, about 10 minutes per inch of thickness, turning once. When fish is cooked, place on serving platter and top each with some of the salad mixture. Serve immediately. Serves 4
