You can find citrus salad in the refrigerated section of the produce department. It is a combination of orange and grapefruit sections packed in juice.

Cook Time: 8 minutes
Ingredients:
- 1 cup bottled citrus salad, drained
- 1/4 cup reserved citrus salad liquid
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- dash white pepper
- 1 cup torn romaine lettuce leaves
- 1/4 cup dried cherries
- 4 red snapper fillets
Preparation:
Place drained citrus salad in small bowl. In another small bowl, combine reserved liquid, olive oil, salt, and pepper and whisk to combine. Reserve 1 tablespoon of this mixture. Add rest to citrus salad along with lettuce and dried cherries; toss to coat and set aside.Preheat broiler. Place red snapper fillets, skin side up, on broiler pan. Brush with reserved dressing mixture.
Broil 6" from heat source for 5-8 minutes or until fish flakes when tested with a fork. Place on serving plate and top with salad mixture; serve immediately. Serves 4
