Red Snapper with Citrus Salad

You can find citrus salad in the refrigerated section of the produce department. It is a combination of orange and grapefruit sections packed in juice.

Prep Time: 10 minutes

Cook Time: 8 minutes

Ingredients:

  • 1 cup bottled citrus salad, drained
  • 1/4 cup reserved citrus salad liquid
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • dash white pepper
  • 1 cup torn romaine lettuce leaves
  • 1/4 cup dried cherries
  • 4 red snapper fillets

Preparation:

Place drained citrus salad in small bowl. In another small bowl, combine reserved liquid, olive oil, salt, and pepper and whisk to combine. Reserve 1 tablespoon of this mixture. Add rest to citrus salad along with lettuce and dried cherries; toss to coat and set aside.

Preheat broiler. Place red snapper fillets, skin side up, on broiler pan. Brush with reserved dressing mixture.

Broil 6" from heat source for 5-8 minutes or until fish flakes when tested with a fork. Place on serving plate and top with salad mixture; serve immediately. Serves 4
