Foods cook quickly and easily on this fabulous appliance. It doesn't heat up your kitchen or house, and the aroma of grilling meats, vegetables, breads, and fruits can whip up appetites like nothing else. Whether you prefer charcoal or gas for grilling, there are some simple rules to follow. Learn about them in How to Grill, part of Busy Cooks Cooking Lessons. And in summertime, the simpler the food the better. Choose excellent quality meats and produce, top with simple bastes, glazes, and marinades, and you never have to serve the same meal twice (unless you want to, of course!). Make sure that you discard marinade or glazes used to baste the food while it's cooking; when you dip a brush or mop into a marinade from meat, you're transferring bacteria. If you want to serve the marinade as a sauce, bring it to a boil in a saucepan and boil for at least 3 minutes.
