By , About.com Guide

Frozen Mint Brownie Dessert is a great choice for summer entertaining or St. Patrick's Day.

Prep Time: 25 minutes

Ingredients:

  • 1 (13" x 9") pan of brownies, baked and cooled
  • 1/2 gallon mint chocolate chip ice cream
  • 1/2 cup heavy whipping cream
  • 1 (16-ounce) can chocolate fudge ice cream topping

Preparation:

Place ice cream in a large bowl and let stand at room temperature while you beat the cream to stiff peaks in a small bowl.

Fold cream into ice cream until combined. Drop ice cream and the chocolate fudge sauce by spoonfuls over the brownies, making layers. Press down when everything is added. Freeze until firm, about 4-6 hours. Let stand at room temperature for 15-20 minutes before slicing to make serving easier. Serves 16
