Roasted Pork Tenderloin and Vegetables

Roasted Pork Tenderloin is surrounded with tender vegetables in this easy one dish meal.

Prep Time: 15 minutes

Cook Time: 50 minutes

Ingredients:

  • 1 pound pork tenderloin
  • 1/2 teaspoon seasoned salt
  • 2 onions, cut into wedges
  • 3 carrots, cut into chunks
  • 2 Yukon gold potatoes, cut into wedges
  • 1/2 teaspoon dried Italian seasoning
  • 2 tablespoons butter

Preparation:

Preheat oven to 425 degrees F. In 9x13" pan, place pork tenderloin and sprinkle with seasoned salt. Arrange vegetables around pork, then dot with butter and sprinkle with Italian seasoning. Bake, uncovered, at 425 degrees F for 35 minutes. Then cover pan with foil and bake 10-15 minutes longer until pork is cooked and vegetables are tender.
