Herbed Spinach Salad

You can make a double batch of this fragrant herb dressing and store it in the fridge up to 7 days.

Prep Time: 25 minutes

Ingredients:

  • 8 oz. baby spinach leaves
  • 1 head bibb lettuce
  • 3 oz. can sliced ripe olives, drained
  • 1/2 cup diced celery
  • 1 pint grape tomatoes
  • 1/3 cup Herb Dressing, as follows:
  • 6 Tbsp. oil
  • 5 Tbsp. white wine vinegar
  • 2 Tbsp. Dijon mustard
  • 1/4 cup water
  • 1 clove garlic, minced
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped fresh basil
  • 1 Tbsp. chopped fresh thyme

Preparation:

Remove stems from baby lettuce and gently tear bibb lettuce into bite-sized pieces. Toss in large bowl with olives, celery, and grape tomatoes.

Make Herb Dressing: Blend all ingredients in small screw-top jar and shake to blend. Store in refrigerator.

Drizzle 1/3 cup Herb Dressing over greens and toss gently. Serves 6
