Spinach Blueberry Salad is a delicious and fresh tasting side salad recipe. You could turn this into a main dish salad by adding some cooked chicken or shrimp.

Ingredients:
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/3 cup olive oil
- 1 (10-ounce) package baby spinach leaves
- 1/2 cup crumbled blue cheese
- 1-1/2 cups blueberries
- 1/2 cup dried blueberries
- 2 tablespoons grated Parmesan cheese
Preparation:
In large bowl, combine vinegar, mustard, lemon juice, sugar, and salt and mix well. Whisk in olive oil until combined. Add spinach leaves and toss to coat.
Add blue cheese and both kinds of blueberries. Toss gently, then sprinkle with Parmesan cheese and serve immediately. Serves 4-6
