Grilled Havarti and Apple Sandwich is one of my absolute favorites. Apples are cooked until crisp tender, then sandwiched with Havarti cheese and raisin bread, then grilled until everything melts together.

Yield: 4 servings
Ingredients:
- 1 Granny Smith apple, peeled
- 1 teaspoon butter
- 4 slices Havarti cheese
- 8 slices raisin bread
- 1/4 cup butter, softened
Preparation:
Slice the apple into 16 thin slices. Place in small microwave-safe bowl with 1 teaspoon butter. Microwave on high for 1 minute; remove and stir gently. If the apples are crisp-tender, they're done. If not, continue microwaving on high for 30 second intervals until done.
Make sandwiches with cooked apples, cheese, and raisin bread. Butter the outsides of the sandwiches. Cook over medium heat on preheated griddle, covering and turning once, until cheese melts and bread is toasted. Cut in half diagonally and serve immediately.
