Unstuffed Cabbage is a delicious and easy variation of Stuffed Cabbage. It's homey, comforting, and so simple and quick to make.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: Serves 8

  • 1 pound ground beef
  • 1 14-ounce can diced tomatoes, undrained
  • 1 (8-ounce) can tomato sauce
  • 1 (6-ounce) can tomato paste
  • 1 cup water
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 5 cups chopped green cabbage
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons Dijon mustard

Preheat oven to 350 degrees F. In large skillet, brown ground beef over medium heat, stirring to break up meat. Drain well. Add tomatoes, tomato sauce, tomato paste, water, and bay leaf and bring to a simmer. Simmer, stirring occasionally, for 15 minutes.

Meanwhile, heat olive oil and butter in another skillet. Add cabbage, onion, and garlic and cook until the cabbage gives up its liquid and the liquid evaporates.

Remove bay leaf from meat sauce. Add mustard, salt, and pepper to meat sauce.

Place cabbage in the bottom of a 13" x 9" glass baking dish. Top with the meat mixture. Bake for 20-25 minutes or until casserole is bubbly.
