Danish Mini Meatloaves

This recipe violates the 'do not overhandle' rule for meatloaf. Because there is so much club soda added to the ground meats, the meatloaf stays tender and moist.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1/4 lb. ground veal
  • 1/4 lb. ground beef
  • 1/2 lb. ground pork
  • 1 onion, chopped
  • 1 Tbsp. oil
  • 3 Tbsp. flour
  • 1 cup club soda
  • 1 egg, beaten
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup butter
  • 2 Tbsp. oil

Preparation:

Place meats in large bowl. In heavy skillet, saute onion in 1 Tbsp. oil until tender. Add to meats along with flour. Beat in the club soda, a few tablespoons at a time, until mixture is light and fluffy. Beat in egg, salt, and pepper. Form meat mixture into mini loaves 4" long, 2" wide and 1" high.

Melt butter and oil in skillet used to saute onions and add mini meatloaves, 4 at a time. Cook, turning patties gently, until deep brown. Make sure internal temperature registers 160 degrees F. Remove to preheated 300 degree F oven to keep warm. Cook remaining mini meatloaves.
