Garlic Meatloaf

Garlic flavored croutons, along with sauteed garlic, add a wonderful depth of flavor to this moist, classic meatloaf recipe.

Prep Time: 25 minutes

Cook Time: 65 minutes

Ingredients:

  • 1 cup garlic flavored croutons
  • 1/2 tsp. garlic salt
  • 1/4 tsp. white pepper
  • 4 cloves garlic, minced
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped red bell pepper
  • 1 Tbsp. olive oil
  • 2 eggs, beaten
  • 1 lb. ground beef
  • 1 lb. ground turkey
  • 1/2 cup ketchup
  • 2 Tbsp. honey
  • 1/2 tsp. dried thyme leaves

Preparation:

Preheat oven to 350 degrees F. Crush croutons, either in food processor, or in plastic bag with a rolling pin. Mix with garlic salt and white pepper in large bowl and set aside.

Saute garlic, onion, and bell pepper in olive oil until tender. Add to bowl with crouton crumbs. Add eggs and mix well. Add meats and mix gently to combine.

Form into loaf on broiler pan. In small bowl combine ketchup, honey, and thyme and mix well. Spread half of this mixture over the loaf. Bake at 350 degrees F for 60-70 minutes until internal temperature registers 170 degrees F, brushing with remaining ketchup mixture halfway through baking time. Let stand for 15 minutes before slicing. Serves 10
