Individual Meatloaves

A tangy glaze of ketchup and brown sugar tops these delicious mini meatloaves, adding wonderful flavor and color.

Prep Time: 20 minutes

Cook Time: 55 minutes

Ingredients:

  • 1/2 cup finely chopped onion
  • 1 Tbsp. olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 3/4 cup buttery round cracker crumbs
  • 1/3 cup milk
  • 1/4 cup ketchup
  • 1 tsp. dried Italian seasoning
  • 1/2 tsp. garlic salt
  • 1 lb. ground pork
  • 1 lb. ground beef
  • 1 cup ketchup
  • 1/2 cup brown sugar

Preparation:

Preheat oven to 350 degrees F. In small skillet, cook onions in olive oil until tender. Remove to large bowl and add Parmesan cheese, eggs, crumbs, milk, 1/4 cup ketchup, Italian seasoning, and garlic salt. Mix well. Add ground pork and ground beef and mix gently with hands. Form into 8 mini meatloaves and place on broiler pan.

In small bowl, mix 1 cup ketchup and brown sugar until blended. Spoon this mixture over each loaf. Bake at 350 degrees F for 50-60 minutes until internal temperature registers 160 degrees F. 8 servings
