Individual Meatloaves

A tangy glaze of ketchup and brown sugar tops these delicious mini Individual Meatloaves, adding wonderful flavor and color.

Prep Time: 20 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 10 minutes

Yield: 8 servings


  • 1/2 cup finely chopped onion
  • 1 Tbsp. olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 3/4 cup buttery round cracker crumbs
  • 1/3 cup milk
  • 1/4 cup ketchup
  • 1 tsp. dried Italian seasoning
  • 1/2 tsp. garlic salt
  • 1 lb. ground pork
  • 1 lb. ground beef
  • 1 cup ketchup
  • 1/2 cup brown sugar


Preheat oven to 350 degrees F. In small skillet, sauté onions in olive oil until tender. Remove to large bowl and add Parmesan cheese, eggs, crumbs, milk, 1/4 cup ketchup, Italian seasoning, and garlic salt. Mix well. Add ground pork and ground beef and mix gently with hands. Form into 8 mini meatloaves and place on broiler pan.

In small bowl, mix 1 cup ketchup and brown sugar until blended. Spoon this mixture over each loaf. Bake at 350 degrees F for 50-60 minutes or until internal temperature registers 160 degrees F.

, Guest Not a meatloaf lover

I am not a meatloaf lover but these little guys are ideal. If this had been a traditional meatloaf recipe (using a 5x9 loaf pan), most of it would have been thrown out. With these mini meatloaves I can freeze them and have them when I want them. They were moist and flavourful. Next time I make them though, I will not put as much glaze on each little meatloaf. Some of it falls off the side and burns which takes away from the flavour. I made mine with lean ground beef as I can't eat pork.
