A tangy glaze of ketchup and brown sugar tops these delicious mini meatloaves, adding wonderful flavor and color.

Ingredients:
- 1/2 cup finely chopped onion
- 1 Tbsp. olive oil
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 3/4 cup buttery round cracker crumbs
- 1/3 cup milk
- 1/4 cup ketchup
- 1 tsp. dried Italian seasoning
- 1/2 tsp. garlic salt
- 1 lb. ground pork
- 1 lb. ground beef
- 1 cup ketchup
- 1/2 cup brown sugar
Preparation:
Preheat oven to 350 degrees F. In small skillet, cook onions in olive oil until tender. Remove to large bowl and add Parmesan cheese, eggs, crumbs, milk, 1/4 cup ketchup, Italian seasoning, and garlic salt. Mix well. Add ground pork and ground beef and mix gently with hands. Form into 8 mini meatloaves and place on broiler pan.In small bowl, mix 1 cup ketchup and brown sugar until blended. Spoon this mixture over each loaf. Bake at 350 degrees F for 50-60 minutes until internal temperature registers 160 degrees F. 8 servings
