Light and Velvety Meatloaf

This light and velvety meatloaf recipe uses buttermilk as the secret ingredient.

Prep Time: 20 minutes

Cook Time: 1 hour

Ingredients:

  • 2 (1" thick) slices bread (preferably homemade)
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 2 garlic cloves, minced
  • 1 Tbsp. Dijon mustard
  • 1/8 tsp. pepper
  • 1 tsp. Worcestershire sauce
  • 2 Tbsp. ketchup
  • 2 lbs. ground chuck

Preparation:

Preheat oven to 350 degrees. In a large bowl, soak the bread slices in the buttermilk for 20 minutes. Then add the eggs, garlic, mustard, pepper, Worcestershire sauce and ketchup and mix well. Gently stir in the ground chuck and mix just until combined. Place in a 9"x5" loaf pan. Bake at 350 degrees for 55-65 minutes until internal temperature registers 160 degrees. Cover and let stand 15 minutes before slicing. Serves 6-8
