Matzo Meatloaf

Matzo Meatloaf is made from leftover Passover matzohs, along with ground meat, eggs, and seasonings. You can use all ground beef, or meatloaf mix, depending on your preferences.

Prep Time: 25 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 matzos or 1/2 cup matzo meal
  • 2 eggs, beaten
  • 1/4 cup beef broth
  • 1/3 cup water
  • 1/2 tsp. dried marjoram leaves
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 Tbsp. olive oil
  • 1-1/2 lbs. ground beef
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 3 Tbsp. honey
  • 1/4 cup ketchup
  • 3 Tbsp. mustard

Preparation:

Preheat oven to 350 degrees F. Grind matzos in blender or food processor until fine crumbs form. Place in large bowl and add eggs, beef broth, water, and marjoram. Mix well and set aside.

In large skillet, cook garlic and onion in olive oil until tender. Stir into matzo mixture. Then add beef, salt, and pepper and mix gently with hands just until combined.

Form mixture into oval loaf and place on foil lined broiler pan. Cut through the foil to allow the fat to drain into the bottom of the pan. In small bowl, combine honey, ketchup, and mustard and spoon half of this mixture evenly over the meatloaf. Bake at 350 degrees F for 1 hour. Remove from oven and spoon remaining honey mixture over loaf. Return to oven and bake for 15-20 minutes longer, until instant read meat thermometer reads 165 degrees F. Cover and let stand for 10 minutes before slicing. Serves 8
