Pesto Meatloaf

I think pesto goes with anything! Well, maybe not baked peaches. This wonderful recipe has the best flavor; try it soon.

Prep Time: 20 minutes

Cook Time: 1 hours, 10 minutes

Ingredients:

  • 1 spicy pork sausage
  • 1 onion, finely chopped
  • 8 oz. pkg. mushrooms, finely chopped
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg, beaten
  • 1/2 cup seasoned dry bread crumbs
  • 1/2 cup prepared pesto
  • 1/2 lb. lean ground beef
  • 1/2 lb. lean ground pork

Preparation:

Preheat oven to 375 degrees. Remove casing from pork sausage, crumble sausage and set aside. In a large skillet, heat olive oil and add onion and mushrooms. Saute until vegetables are tender and liquid has evaporated, about 15 minutes. Place in large bowl and let cool 15 minutes. Add salt, pepper, beaten egg, bread crumbs, and pesto. Mix well. Then add ground beef, ground pork, and reserved sausage. Mix gently but thoroughly until combined.

Form meat mixture into a loaf and place in a shallow roasting pan. Bake at 375 degrees for 60-75 minutes, or until internal temperature registers 160 degrees. Let stand 15 minutes before slicing. Serves 4-6
