Ingredients:
- 1 lb. ground beef
- 1 lb. pkg. frozen broccoli and carrots
- 1 Tbsp. brown sugar
- 1/2 tsp. ginger
- 2 cloves garlic, minced
- 1/8 tsp. pepper
- 8 oz. can pineapple tidbits, drained, reserving juice
- 2 Tbsp. soy sauce
- 1 Tbsp. apple cider vinegar
- 1 Tbsp. sugar
- 1 Tbsp. cornstarch
- 3 Tbsp. water
Preparation:
Brown ground beef in large skillet, then drain. Add vegetables, brown sugar, ginger, garlic, pepper, reserved pineapple juice, soy sauce, and vinegar and stir well. Bring to a boil. Reduce heat and cover skillet; simmer for 6 minutes until vegetables are crisp tender. Add pineapple and stir.Combine cornstarch and water in small bowl and stir until smooth. Add to skillet; cook and stir until sauce thickens and boils. Serve over rice or noodles. 4 servings
