Ingredients:
- 1 lb. ground beef
- 1 lb. pkg. frozen vegetables, like baby green beans and carrots or broccoli and carrots
- 2 Tbsp. brown sugar
- 1/2 tsp. ginger
- 2 cloves garlic, minced
- 1/8 tsp. pepper
- 8 oz. can pineapple tidbits, drained, reserving juice
- 1/2 cup beef broth, divided
- 3 Tbsp. soy sauce
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. granulated sugar
- 2 Tbsp. cornstarch
Preparation:
Bring to a boil. Reduce heat and cover skillet; simmer for 4-6 minutes until vegetables are crisp tender. Add pineapple and stir.
Combine granulated sugar, cornstarch and remaining 1/4 cup beef broth in small bowl and stir until smooth. Add to skillet; cook and stir until sauce thickens and boils. Serve over rice or noodles.
