Tropical Beef

This delicious main dish recipe will bring the flavor of the tropics to your home even in the dead of winter.

INGREDIENTS:

  • 1/2 cup coconut
  • 1 lb. lean ground beef
  • 1 onion, finely diced
  • 1/2 tsp. salt
  • dash white pepper
  • 1 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 2 Tbsp. cornstarch
  • 8 oz. can pineapple tidbits, drained, reserving liquid
  • 16 oz. can mandarin oranges, drained, reserving liquid
  • 1/2 cup chopped salted cashews
  • Hot cooked rice

PREPARATION:

In large skillet, toast coconut over medium heat until golden and crisp. Set aside. Brown ground beef and onion in same skillet and drain well. Add salt, pepper, lemon juice and soy sauce.

Combine cornstarch with reserved pineapple and mandarin orange liquids and stir well. Add cornstarch mixture to ground beef and cook over medium high heat for 5 minutes, stirring constantly, until mixture is thickened. Stir in pineapple and oranges and cook for 2-3 minutes until thoroughly heated. Serve over noodles or rice and sprinkle with toasted coconut and cashews.
