Make this simple and spicy pineapple salsa ahead of time, then when you want to eat, just grill the ham and serve. The combination of dried cherries and pineapple reminds me of the classic ham glaze.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

  • 1/2 cup dried cherries, chopped
  • 8 oz. can crushed pineapple, drained, reserving juice
  • 3 Tbsp. peach jam
  • 2 Tbsp. chopped cilantro
  • 1 Tbsp. minced jalapeno peppers
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 slice fully cooked ham slice (about 1-2 pounds)

Preparation:

Prepare and heat grill. Combine dried cherries, drained pineapple, jam, cilantro, peppers, lemon juice, salt, and pepper in small bowl and refrigerate until serving time.

Prepare and preheat grill. Grill ham 6" from medium coals for 12-20 minutes, turning two or three times and brushing with reserved pineapple juice, until hot. Serve with salsa. 6 servings

Fabulous Salsa, Member LilyTree

I served this with a baked, not grilled, ham for a dinner party for people who can't have onions. It was a hit, even with guests who do not like spicy hot food. I didn't have dried cherries so substituted dried cranberries. Love your site, Linda. Thanks!
