Just five ingredients combine to make a delicious one dish meal for a cold fall or winter night.

Ingredients:
- 1 Tbsp. olive oil
- 1 onion, chopped
- 4 oz. pkg. long grain and wild rice mix
- 1-3/4 cups water or chicken broth
- 2 cups frozen broccoli florets
- 1-1/2 cups cubed cooked ham
- 1/3 cup grated Parmesan cheese
Preparation:
In a large skillet, melt olive oil over medium heat and cook onion until tender, stirring frequently. Add rice from mix and cook for 2 minutes, stirring frequently. Add water and contents of seasoning packet from the rice mix; mix well. Bring to a boil, then reduce heat to low, cover the skillet, and cook for 10 minutes, stirring occasionally.
Stir in broccoli and ham. Return mixture to a boil, then reduce heat again to low, cover, and cook 10-15 minutes until rice is tender, stirring frequently. Stir in Parmesan cheese and serve. Serves 4
