Hash Brown Quiche

Using hash brown potatoes as the base instead of a pie crustis much easier, with a wonderful flavor.

Prep Time: 25 minutes

Cook Time: 50 minutes

Ingredients:

  • 3 cups frozen hash brown potatoes, thawed and drained
  • 1/3 cup finely chopped onion
  • 2 Tbsp. finely chopped green pepper
  • dash white pepper
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1-1/2 cups chopped ham
  • 1/4 cup finely chopped onion
  • 1 cup grated Swiss cheese
  • 1 cup milk
  • 4 eggs
  • 2 tsp. mustard
  • dash white pepper
  • 1/4 cup grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees. In a medium bowl, combine potatoes, 1/4 cup onion, green pepper, white pepper, and salt. Fold in 1 beaten egg. Spray a 9-inch pie plate with non-stick cooking spray. Pat potato mixture evenly into prepared pie plate to form a crust, building up sides to rim.

Bake at 400 degrees for 25 to 30 minutes or until potatoes are golden brown.

Sprinkle ham, remaining 1/4 cup chopped onion and grated swiss cheese evenly over potato crust.

In a small bowl, combine milk, 4 eggs, mustard and pepper and mix well with wire whisk. Pour over ingredients in potato crust and sprinkle with Parmesan cheese.

Bake at 350 degrees for 30-35 minutes or until a knife inserted near center comes out clean. Let quiche stand 5 minutes before cutting. 6 servings
