Radio Show Recipes for Cooking with Ken and Cindy

Baked Grilled Pesto Cheese Sandwiches

Baked Grilled Pesto Cheese Sandwiches

Linda Larsen
On Sunday, January 23, 2011 I had the honor of appearing (for the second time!) on Cooking with Ken and Cindy, a show on the Accessible World Network. This wonderful place helps those with limited vision navigate through the world with ease. If you go to Ken and Cindy's web page, and scroll down, you can listen to the archived show from last year. This year's show should be posted in the next few days.

On the show, we talked about crockpot cooking, the Super Bowl, and five ingredient recipes. So I thought I'd gather the recipes mentioned on the program into one place so anyone who's interested can try them.

  • Salsa Crockpot Chicken
This two ingredient recipe is a real winner. Look for special salsas in any grocery store, or order some online. You can substitute cubed pork for the chicken thighs if you'd like. To use bone-in, skin-on chicken thighs, brown the thighs first to remove some of the fat, then cook for an additional two hours on low.
  • Top 10 Chicken Thigh Recipes
Chicken thighs are inexpensive, delicious, and so forgiving. They're very hard to overcook, which makes them perfect for a busy family. Enjoy these easy recipes.
  • 500 Five Ingredient Recipes
A listener asked for five ingredient recipes. Here's a bunch! I love thinking up new permutations of the five ingredient genre, so if you have ideas, let me know!
  • My Great-Grandmother's Stuffing in the Crockpot
This recipe has been in my family for generations. Cooking it in the crockpot means you can double the recipe! The crockpot is an ideal environment for cooking stuffing because it mimics the turkey cavity - moist and sealed.
  • Easy Skillet Meals
All you need is a spoon, a skillet, and some food to make these quick quick one pot meals. And they're delicious!
  • Microwave Magic
Using the microwave oven is a great way to make quick meals. Standing time is one of the most important steps in microwave cooking. Read on to learn more!
  • Microwave Salmon with Orange Sauce
This simple recipe is packed full of flavor. Be sure to let the casserole dish stand on a solid surface for 4-5 minutes after cooking so the heat distributes evenly throughout the fish.
  • Spicy Crockpot Chicken Drummies
For the Super Bowl, everyone expects some variation of chicken wings. This easy recipe is delicious. Make it as spicy as you'd like by adding chopped green chiles or jalapenos.
  • Baked Grilled Cheese Sandwiches
This super easy recipe makes a pan full of perfect grilled cheese sammies for a crowd. Use your favorite bread and favorite cheeses, and add everything from pesto to sliced tomatoes to roasted red pepper to the sandwiches.
  • New Buffalo Chicken Wings
If you're a squeamish carnivore like I am, you might prefer this version of wings for your Super Bowl party!
  • Crockpot Meatball Recipes
Frozen precooked meatballs are a fabulous convenience food, and so easy to cook in the crockpot.
  • Crockpot BBQ Meatballs
This is another great Super Bowl recipe. To dress it up a bit, buy some little frozen filo shells and use tiny meatballs. Then just plop a meatball with sauce into each shell for a portable appetizer.
  • Creamy Italian Chicken
I love this recipe; it's creamy, rich, flavorful, and satisfying.
  • Crockpot Beef Stroganoff
For entertaining with your crockpot, nothing beats this recipe. Serve it over hot cooked noodles with a green salad and some garlic bread and your guests will swoon.
  • Crockpot Chocolate Fondue
Crockpot desserts are another great use of this appliance. Serve this rich and creamy fondue with crisp cookies, pretzels (good idea Ken!), fresh fruit, and pound cake.
  • Crockpot Cherry Cobbler
Use any flavor pie filling in this super easy recipe. Serve it with some cold ice cream for a great finish to any meal.
  • Crockpot Wild Rice Chili
Adding wild rice to chili makes it hearty and adds great nutty flavor, along with some healthy fiber.
  • Best Truffles
And as a bonus, my favorite recipe for Chocolate Truffles - to serve for Valentine's Day, the Super Bowl, or just because!
