Bacon Crisp Sandwiches

From Everything 30-Minute, 5-Ingredient Cookbook

This delicious sandwich, from my book Everything 30-Minute, 5-Ingredient Cookbook, cooks bacon in the microwave, then uses it in a wonderful combination of tomatoes and mayonnaise. You could add lettuce, some thinly sliced Cheddar or Swiss cheese, or some sliced avocado if you'd like. Yum!

INGREDIENTS:

  • 8 slices bacon
  • 3/4 cup grated Parmesan cheese, divided
  • 1/2 teaspoon dried basil leaves
  • 1/4 cup mayonnaise
  • 8 slices whole-wheat bread
  • 2 tomatoes, thickly sliced
  • 3 tablespoons butter, softened

PREPARATION:

Dip bacon slices in 1/2 cup Parmesan cheese and press to coat. Place 4 slices of the coated bacon on microwave-safe paper towels in a 12" x 8" microwave-safe baking dish. Cover with another sheet of microwave-safe paper towel. Microwave on high for 3-4 minutes or until bacon is light golden brown. Repeat with remaining bacon slices.

Meanwhile, in small bowl, combine thyme, mayonnaise, and remaining 1/4 cup Parmesan cheese. Spread on one side of each bread slice. Make sandwiches with the cooked bacon and tomatoes, and spread outsides of sandwiches with butter. Grill in a hot skillet or in a dual-contact grill until bread is toasted, then cut in half and serve immediately. Serves 4
