Brie Peach Bruschetta is a beautiful and elegant, yet super easy recipe for an appetizer or an open faced hot sandwich. You can add tomatoes, or make it with all juicy, ripe, sweet and tart peaches. Yum.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: Serves 6-8

Ingredients:

  • 1 ciabatta bread, sliced horizontally
  • 16 ounces Brie cheese, sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon curry powder
  • Salt and pepper to taste
  • 3-5 fresh peaches, peeled and sliced
  • 2-3 ripe red tomatoes, sliced, if desired

Preparation:

Cut ciabatta bread halves into 4-5 pieces each. Cover cut sides with Brie cheese; place on broiler rack.

In small bowl combine oil, lemon juice, curry powder, and salt and pepper; mix well. Broil bread with brie until cheese melts and begins to brown in spots. Arrange peach and tomato slices, if using, on cheese. Drizzle with vinaigrette and serve immediately.

This recipe can be grilled. Grill the bread first until lightly marked with grill marks. Cover with the Brie and return to grill; cover grill and cook for 1-2 minutes until the cheese is melted. Top with fruit and vinaigrette and serve.

Bridal shower snacks, Guest

My Matrion of Honor made these for my bridal shower, she left the tomatoes off and cut the peaches a little smaller than it showed on here, but they were AMAZING! I went and bought stuff to make them the next day. A new snack time favorite!
