These easy sandwiches cook all day while you're at work. Hoisin sauce, ginger, and shiitake mushrooms add exotic flavor to pork roast.
Prep Time: 15 minutes
Cook Time: 9 hours
Total Time: 9 hours, 15 minutes
Yield: 12 sandwiches
Ingredients:
- 3 lb. boneless pork loin roast
- 1/2 cup hoisin sauce
- 2 Tbsp. grated ginger root
- 2 cloves garlic, minced
- 1 onion, chopped
- 6 dried shiitake mushrooms
- 1/4 cup chicken broth
- 4 cups shredded napa cabbage
- 12 flour tortillas
- 2 Tbsp. toasted sesame seeds
Preparation:
In 4-6 quart slow cooker, place pork. In small bowl, combine hoisin sauce, ginger root, garlic, and onion and mix well; spoon over pork. Cut off and discard stems from dried mushrooms and place in crockpot. Pour chicken broth over all; cover and cook on low for 8-10 hours until pork is very tender.
Remove pork from slow cooker and shred, using two forks. Add cabbage to liquid remaining in slow cooker; cover and cook on high for 10 minutes. Return heat to low, add shredded pork and stir well. Make sandwiches with flour tortillas, sprinkling filling with sesame seeds before rolling up.
If you have a newer, hotter cooking crockpot, check for doneness at 7-8 hours.
