Vegetarian Sloppy Joes

No one will miss the meat in these easy vegetarian hot sandwiches.

INGREDIENTS:

  • 1 cup lentils, sorted and rinsed
  • 2 cups water
  • 2 onions, chopped
  • 3 carrots, chopped
  • 4 stalks celery, chopped
  • 3/4 cup ketchup
  • 3 Tbsp. brown sugar
  • 1 Tbsp. cider vinegar
  • 1 Tbsp. yellow mustard
  • 10 kaiser rolls, split and toasted

PREPARATION:

Sort over lentils and combine with water in medium saucepan. Bring to a boil, then cover and simmer for 10 minutes. Place in 3-4 quart crockpot with remaining ingredients except for vinegar, mustard, and kaiser rolls. Cover and cook for 10-12 hours until thickened. [p[]Stir in vinegar and mustard just before serving. Make sandwiches using toasted buns. 10 sandwiches
